how can i change the format of the pictures i take on the lumix g1?
so i can open it with iphoto photo shop or anything really?

I do not know that camera but below is a link to a webpage that has a link so that you can download a pdf manual for the camera and look that up.

Change format of photos? I don't think that's possible. They should be standard .jpg format.
